Is it just me or is it actually getting colder the closer to Spring we get? Well have no fear; this vegetable soup is exactly what you need if, no matter how hard you try, you just can’t get warm. Or use it to heal bodies and minds alike when conventional medicine has failed you.

- 200g carrots
- 200g swede
- 125g kale
- 1 medium onion
- 1.5l vegetable stock
- Pinch each of mixed herbs, black pepper and sea salt
- 1 tbsp turmeric
Preparation Time: 5-10 minutes
Cooking Time: 25 minutes
- Chop all the vegetables and with the stock, along with a little salt and pepper, to soup pot/saucepan. Bring to the boil, cover and simmer for 15 minutes.
- Add kale, mixed herbs, and turmeric. Return to the boil and simmer for another 10 minutes.
- Serve hot, with optional wholegrain bread.
